Here's a recipe for Omelette Goje Farangi—a Persian-style omelette with tomatoes—for a healthy and unique breakfast choice:
Ingredients:
- 4 large eggs
- 1 tomato, diced
- 1/2 onion, finely chopped
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: feta cheese or goat cheese for topping
Instructions:
- In a bowl, whisk the eggs until well beaten. Season with salt and pepper to taste. Set aside.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Add the chopped onions and sauté until they turn translucent and slightly golden.
- Add the diced tomatoes to the skillet and cook for a few minutes until they soften.
- Pour the beaten eggs over the cooked onions and tomatoes in the skillet.
- Sprinkle the chopped parsley evenly over the eggs.
- Allow the mixture to cook undisturbed for a few minutes until the edges start to set.
- Carefully lift the edges of the omelette with a spatula and tilt the skillet to let the uncooked eggs flow underneath.
- Cook until the omelette is mostly set, with a slightly runny center.
- Slide the omelette onto a plate and fold it in half. You can also fold it into quarters if preferred.
- Drizzle the remaining tablespoon of olive oil over the top. Optionally, crumble some feta cheese or goat cheese on top for added flavor.
- Serve the Melette Goje Farangi warm as a healthy and different breakfast choice.
