Here's a recipe for Omelette Goje Farangi—a Persian-style omelette with tomatoes—for a healthy and unique breakfast choice:


Ingredients:

  • 4 large eggs
  • 1 tomato, diced
  • 1/2 onion, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: feta cheese or goat cheese for topping

Instructions:

  1. In a bowl, whisk the eggs until well beaten. Season with salt and pepper to taste. Set aside.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. Add the chopped onions and sauté until they turn translucent and slightly golden.
  4. Add the diced tomatoes to the skillet and cook for a few minutes until they soften.
  5. Pour the beaten eggs over the cooked onions and tomatoes in the skillet.
  6. Sprinkle the chopped parsley evenly over the eggs.
  7. Allow the mixture to cook undisturbed for a few minutes until the edges start to set.
  8. Carefully lift the edges of the omelette with a spatula and tilt the skillet to let the uncooked eggs flow underneath.
  9. Cook until the omelette is mostly set, with a slightly runny center.
  10. Slide the omelette onto a plate and fold it in half. You can also fold it into quarters if preferred.
  11. Drizzle the remaining tablespoon of olive oil over the top. Optionally, crumble some feta cheese or goat cheese on top for added flavor.
  12. Serve the Melette Goje Farangi warm as a healthy and different breakfast choice.
